  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups mixed vegetables (such as potatoes, carrots, bell peppers, or zucchini), chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried herbs (like Italian seasoning)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) or heat a grill to medium-high.
  2. In a bowl, mix ground beef with salt, black pepper, garlic powder, and onion powder.
  3. Form the mixture into 4 equal patties.
  4. In another bowl, toss chopped vegetables with olive oil, dried herbs, salt, and pepper.
  5. Lay out large pieces of foil and place a portion of vegetables in the center of each.
  6. Place a burger patty on top of the vegetables.
  7. Fold the foil tightly to create sealed packets.
  8. Place packets on a baking sheet or grill.
  9. Cook for 25 to 30 minutes, until burgers are cooked through and vegetables are tender.
  10. Carefully open the packets and serve.

Notes

  • Add cheese on top of the burgers during the last few minutes of cooking.
  • Use ground turkey or chicken instead of beef for a lighter option.
  • Try different vegetables like corn or mushrooms.
  • Add barbecue sauce or ketchup for extra flavor.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat in the oven for best texture or microwave if needed.
