Instructions
Preheat the oven to 350°F (175°C).
Press the sugar cookie dough evenly onto a greased pizza pan or large baking sheet, forming a large circle.
Bake for 12 to 15 minutes, or until lightly golden around the edges. Allow the crust to cool completely.
In a mixing bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract and continue beating until creamy and well combined.
Spread the cream cheese mixture evenly over the cooled cookie crust.
Wash, dry, and prepare all fruit by slicing larger fruits into bite-sized pieces.
Arrange the fruit decoratively over the cream cheese layer.
If using a glaze, heat the apricot preserves with a small amount of water until smooth and brush lightly over the fruit.
Refrigerate for at least 1 hour before slicing and serving.
Notes
Pat fruit dry thoroughly before arranging to prevent excess moisture.
Use seasonal fruits such as peaches, cherries, or pomegranate seeds for variety.
A brownie or shortbread crust can be substituted for a different flavor.
Drizzle melted white chocolate over the finished pizza for extra sweetness.
Store covered in the refrigerator for up to 3 days.
For best texture and appearance, assemble shortly before serving.
