Beef Tips and Vegetables

Beef Tips and Vegetables is a hearty comfort dish featuring tender beef simmered in a rich savory sauce with carrots, potatoes, and peppers. The slow cooking allows the flavors to blend beautifully, creating a satisfying meal perfect for family dinners.

  • Total Time: 55 minutes
  • Yield: 4–5 servings

Ingredients

  • 1½ lbs beef stew meat or beef tips
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 medium potatoes, diced
  • 1 bell pepper, chopped
  • 2 cups beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Add beef tips and cook until browned on all sides. Remove and set aside.
  3. In the same pot, add chopped onion and cook until softened.
  4. Stir in minced garlic and cook for about 30 seconds until fragrant.
  5. Add carrots, potatoes, and bell peppers, stirring to combine.
  6. Return the beef to the pot.
  7. Pour in beef broth and stir in soy sauce, tomato paste, and Worcestershire sauce.
  8. Season with salt, black pepper, and paprika.
  9. Bring to a gentle simmer, cover, and cook for 30–40 minutes until the beef is tender and vegetables are cooked through.
  10. In a small bowl, mix cornstarch and water to make a slurry, then stir it into the pot.
  11. Cook for a few minutes until the sauce thickens.
  12. Garnish with chopped parsley and serve warm.

Notes

  • Chuck roast or stew meat works best because it becomes tender when simmered.
  • If the sauce becomes too thick, add a splash of beef broth.
  • For deeper flavor, let the dish rest for a few minutes before serving.
