Biscoff Ice Cream Sandwiches

Biscoff Ice Cream Sandwiches are a simple frozen dessert featuring crunchy Biscoff cookies, creamy vanilla ice cream, and rich cookie butter spread. These no-bake treats are easy to make ahead and perfect for warm-weather gatherings.

  • Total Time: 2 hours 15 minutes
  • Yield: 8 ice cream sandwiches

Ingredients

  • 16 Biscoff cookies
  • 2 cups vanilla ice cream, softened
  • 1/4 cup Biscoff cookie spread
  • 1/2 cup crushed Biscoff cookies, for coating (optional)
  • 1/4 cup mini chocolate chips (optional)
  • 2 tablespoons caramel sauce (optional)

Instructions

  1. Allow the ice cream to soften slightly at room temperature for 5 to 10 minutes.
  2. Arrange 8 Biscoff cookies on a parchment-lined tray.
  3. Spread a thin layer of Biscoff cookie spread on the flat side of each cookie.
  4. Place a generous scoop of softened ice cream on top of each prepared cookie.
  5. Gently press another Biscoff cookie on top to create sandwiches.
  6. Smooth the edges of the ice cream with a knife or spatula if desired.
  7. Roll the exposed ice cream edges in crushed Biscoff cookies, mini chocolate chips, or preferred toppings.
  8. Place the sandwiches in the freezer for at least 2 hours or until firm.
  9. Serve directly from the freezer and enjoy.

Notes

  • Try cookie butter, caramel, or coffee ice cream for flavor variations.
  • Dip half of each sandwich in melted chocolate for extra indulgence.
  • Store in an airtight container in the freezer for up to 2 weeks.
  • Separate layers with parchment paper to prevent sticking.
  • Let sit at room temperature for 2 to 3 minutes before serving if very firm.
  • Chopped nuts and sprinkles make excellent edge coatings.
