Chicken Salad Croissant Sandwiches combine flaky, buttery croissants with a creamy chicken salad made with tender chicken, crisp vegetables, and a flavorful dressing. Perfect for lunch, brunch, picnics, or meal prep, these sandwiches are fresh, satisfying, and easy to customize.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • 4 large croissants, sliced in half
  • 3 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream or plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 celery stalks, finely diced
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • Lettuce leaves
  • Tomato slices (optional)

Instructions

  1. Place the cooked chicken in a large mixing bowl.
  2. Add the mayonnaise, sour cream or Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and black pepper, then stir until combined.
  3. Mix in the diced celery, chopped red onion, and parsley until evenly distributed.
  4. Refrigerate the chicken salad for at least 20 minutes to allow the flavors to develop.
  5. Slice the croissants in half horizontally.
  6. Layer lettuce leaves on the bottom half of each croissant.
  7. Spoon a generous amount of chicken salad onto the lettuce.
  8. Add tomato slices if desired.
  9. Top with the remaining croissant halves and serve immediately.

Notes

  • Add grapes, dried cranberries, diced apples, or chopped nuts for extra flavor and texture.
  • Fresh dill, chives, or tarragon make excellent herb additions.
  • Store the chicken salad separately from the croissants for up to 4 days in the refrigerator.
  • Do not freeze the prepared chicken salad, as the dressing may separate.
  • Serve with chips, fruit, pasta salad, potato salad, coleslaw, or soup.
