A soft and chewy single-serve red velvet cookie loaded with creamy white chocolate chips. Perfect for satisfying a dessert craving without making a full batch, this bakery-style treat is rich, chocolatey, and easy to prepare.

  • Total Time: 16 minutes
  • Yield: 1 large cookie

Ingredients

  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • 1 egg yolk
  • 1/4 teaspoon vanilla extract
  • A few drops red food coloring
  • 1/4 cup all-purpose flour
  • 1 teaspoon unsweetened cocoa powder
  • 1/8 teaspoon baking soda
  • Pinch of salt
  • 2 tablespoons white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a small baking tray with parchment paper.
  2. Mix the melted butter, brown sugar, and granulated sugar in a small bowl until smooth.
  3. Stir in the egg yolk, vanilla extract, and red food coloring.
  4. Add the flour, cocoa powder, baking soda, and salt, then mix until a soft dough forms.
  5. Fold in the white chocolate chips.
  6. Shape the dough into a large cookie and place it on the prepared baking tray.
  7. Bake for 10–12 minutes, or until the edges are set and the center remains slightly soft.
  8. Allow the cookie to cool for a few minutes before serving.

Notes

  • Skip the food coloring if desired; the cookie will still have classic cocoa flavor.
  • Add chopped pecans or walnuts for extra texture.
  • Substitute dark chocolate chips for a richer flavor.
  • A pinch of espresso powder enhances the chocolate notes.
  • Store in an airtight container for up to 2 days and warm briefly before serving.
