  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

  • 2 cups cooked turkey, shredded or diced
  • 2 cups cooked rice or pasta
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, or green beans)
  • 1 can (10.5 oz) cream of mushroom or chicken soup
  • 1/2 cup milk
  • 1 cup cheddar or mozzarella cheese, shredded
  • 1/2 cup breadcrumbs (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Melt butter in a skillet over medium heat. Add onion and cook until softened, then add garlic and cook briefly.
  3. Add mixed vegetables and cook for a few minutes until slightly tender.
  4. In a large bowl, combine turkey, rice or pasta, sautéed vegetables, cream soup, milk, and half of the cheese. Mix well.
  5. Season with salt, pepper, and parsley if using.
  6. Transfer mixture to baking dish and spread evenly.
  7. Top with remaining cheese and breadcrumbs if desired.
  8. Bake for 30–35 minutes until hot, bubbly, and golden on top.
  9. Let cool slightly before serving.

Notes

  • Use quinoa or mashed potatoes instead of rice or pasta.
  • Add mushrooms, spinach, or broccoli for extra vegetables.
  • Try different cheeses like Gruyère or Parmesan.
  • Top with crushed crackers for extra crunch.
  • Add milk when reheating to maintain creaminess.
